Sweet Potato Apple Bake
Serves 8

6 Sweet Potatoes peeled cut in 8ths
3 Granny Smith Apples, peeled, cored and large dices
1/2 cup Packed Light Brown Sugar
1 cup Mini Marshmallows
1Tbl Chef Johnny's Pie Spice
1/4 cup Chopped Pecans

Put cut sweet potatoes into a large stockpot and cover with water. Cook until not quite done. They should be slightly firm in the center. Mix all the remaining ingredients except the marshmallows. Spray a 9X9 glass-baking dish with vegetable oil. Put the potato/apple mixture in the baking dish and bake at 350 degrees for 30 minutes. Remove from oven and top with the mini marshmallows and return to the oven and cook addition 10 minutes or until marshmallows are slightly brown. Remove and serve.
