Three Grain
Pancake
w/cinnamon syrup
SERVES 4 (About 8-10 6 inch pancakes)
2 slices of whole wheat bread, processed into crumbs
1 1/2 cups milk
2 tablespoons butter
2 eggs, slightly beaten
1/4-cup cornmeal
2 tablespoons cracked wheat
1/4 cup all purpose flour
1/4-teaspoon salt
2 teaspoons baking powder
Preheat your griddle. Place the bread slices in a food processor and pulse until
bread becomes crumbs. Heat the milk and butter in a pan over medium heat
until butter melts. Pour over the whole wheat bread crumbs and let soak for 5
min. Add the remaining ingredients then slowly add the milk mixing until well
combined. Prepare the griddle by spraying with vegetable oil. Using a
tablespoon, drop the batter onto the hot griddle. Cook until brown on both
sides and serve.
SYRUP: 1/2 cup maple syrup
1/2-cup honey
1/4-cup light corn syrup
1-teaspoon Chef
Johnny's Pie Spice
Heat all ingredients in a saucepan to just the point of boiling while stirring
continually. Remove from heat and serve warm.
