| 1/2 cup | butter, at room temperature |
| 2 | eggs |
| 1/2 cup | Molasses |
| 2 cups | dried figs, chopped fine |
| 1/2 tsp. | grated lemon peel |
| 1 cup | buttermilk |
| 1/2 cup | walnuts or pecans, chopped |
| 2 1/2 cups | all-purpose flour |
| 1/2 tsp. | baking soda |
| 2 tsps. | baking powder |
| 1 tsp. | salt |
| 1 T | Chef Johnny's Pie Spice |
In a mixer, beat the butter until fluffy. Add the eggs and molasses and beat until blended well. Add the figs, lemon peel, buttermilk, nuts and blend for 1 minute. Add the remaining ingredients and blend until everything is well incorporated. Grease and flour an 8X4 inch-baking dish and pour in the batter. Bake in a 325-degree oven for approximately 1 hour or until a toothpick inserted into the center comes out clean. When finished baking, remove from oven and allow to cool. Serve slightly warm and garnish with whipped cream.
