Soggy Celery?

This week's tip comes because I always reach into our refrigerator and I most generally have "Soggy Celery".  What do you do with soggy celery?  There are two good ways to improve this unwanted celery.  One is to soak the stalks in a large container filled with ice water.  Do this for about 3 hours.  Another way is to get out our ice tea or water pitcher and fill it with ice water and add a tablespoon of white vinegar or squeeze the juice from one lemon.  Place the stalks vertically in the water and soak them for 2 hours or so in the refrigerator.  This works most of the time on soggy, limp celery.  It is not a cure all and sometimes if the celery is not just limp, but beyond any future use, just toss it out!  Oh, one more thing you can do with a little vinegar.  Next time you make poached eggs, put little white vinegar in the water and it will keep the whites of the egg from spreading all over the water.
