This is what we always ate in the north for New Years. Now that I have
been in Alabama for 22 years, I make this along with black eyed peas and
turnip greens on the side.
Pack of country pork ribs (amount to fit family size)
Boil ribs in large pot until they are not pink. Drain and rinse Sauerkraut well. Add to the water the ribs are cooked in. Drain potatoes and add to the pot. Add salt/pepper and butter. Bring to a boil then
simmer until the ribs are tender (about an hour or as long as you would
like to boil them). Feeds a crowd.
2 large cans of sour Kraut
2-3 cans of white potatoes (sliced or whole)
salt/pepper
2 tablespoons butter
