Key Lime Seafood Seasoning

For a Taste of the Islands on Fish, Seafood and Chicken.  NO MSG! 5oz


Gulf Coast Snapper

Ingredients:

  • 4--Snapper Skinless filets (Talipia filet is also fine) 
  • 1 cup Chopped Roma Tomatoes
  • 1 tsp minced garlic
  • 2 Tbl Capers
  • 1/4 cup Green Olives, sliced
  • 1/8 cup Golden Raisins
  • Key Lime Seafood Seasoning

Instructions:

Combine all the ingredients except Seafood Seasoning.  Add to a saucepan over medium heat, simmer until thoroughly heated.  Set aside.  Spray a cookie sheet with vegetable oil, place the filet on sheet and season with Key Lime seasoning.  Add 2oz of white wine to pan to keep fish moist. Broil in a 400 degree oven until meat is flaky.  Remove and place on a dinner plate and spoon the tomato mixture over the filet.
